The Addict's Banana Pancakes

These banana pancakes really do make me feel like an addict. My boyfriend and I could literally eat these everyday for breakfast, lunch and dinner. They are great plain, they are great with syrup, they are GREAT stuffed with Nutella and topped with caramelized bananas and icing sugar. They are just so great. I found this recipe on allrecipes.com ages ago, and it was the first recipe that got me to eat breakfast everyday. Can you imagine, once upon a time, I wasn't a breakfast eater. Here I am now, an expert on the meal. I can't wait for you guys to try this recipe in all its glory. I will see you all in the BA (Bananaholics Anonymous) next week.

                         Feeds 2                    

  • 1 C flour
  • 1 TBSP white sugar
  • 2 tsp baking powder
  • 1/4tsp salt
  • 1 egg, beaten
  • 1 C milk
  • 2 TBSP vegetable oil
  • 2 ripe bananas

OPTIONAL

  • nutella
  • 1 banana sliced, per person
  • 3 TBSP butter, per person
  • 2 TBSP brown sugar, per person

1. Mix all dry ingredients in a large bowl and set aside.

2. Mash bananas and mix in all wet ingredients.

3. Pour the wet ingredients into the dry ingredient bowl, mix just to combine all ingredients.

4. Pour a few drops of sunflower oil into a frying pan over medium low heat and fry each side until golden and cooked through. Poke a small hole in the pancake's center with a spatula and gently press. If no batter comes out, the pancake is done.

OPTIONAL

1. Spread a layer of Nutella on your two middle pancakes of the stack.

2. Heat a frying pan on medium low heat.

3. Mix brown sugar and butter in a frying pan until combined and bubbly.

4. Add sliced bananas and fry until they are soft, about 2-3 minutes.

5. Pour the mixture over your pancake stack, and top with icing sugar, if desired.
