Healthy Chia Pudding
Ch-ch-ch-chia! That's pretty much what I hear in my head every time I see the word chia come up, it follows me everywhere. I got on the chia train pretty quick when I found out all about the nutritional benefits. If you don't believe me, google it. I'm much too lazy to write out a health spiel promoting chia seeds here, but trust me, they're good. I've been putting a tablespoon of chia seeds in my smoothies every morning, but recently, I began making pudding that I take to work with me every morning. The texture somewhat resembles tapioca pudding, and the pudding is highly customizable. You can add berries, chocolate, nuts, whatever you want, not to mention, it keeps you full for a while!
Makes 1 medium container of chia pudding (3-4 servings)
- 1/4 C chia seeds
- 1 C coconut milk, or almond milk
- 1/2 tbsp honey or other sweetener of choice
additional toppings:
- berries
- shredded coconut
- chopped nuts
1. Mix all the toppings together in a bowl. Seal and put into the fridge overnight.
2. Stir to incorporate all of the little chia seeds that have stuck themselves onto the sides of the container overnight. They want to be eaten, and you seem like a nice enough person.
3. Add your favourite toppings and enjoy!
