Oatmeal Chocolate Chip Skor Cookies

Its 10pm, you get home from work ready to chill out, and your boyfriend throws this at you, "I want dessert." Fine, you think, cookies it is. They are simple, not time consuming in the slightest, and can satisfy absolutely any sweet tooth. The problem is that I had no brown sugar, but my roommate was also sweet toothin' hard and wanted cookies threw the idea at me that I should use his leftover coconut sugar. So I found a quick recipe online, threw it together, substituted some coconut sugar and added skor bits and made these marvellous morsels of Mmmm.

                         Feeds two hungry boys, one female, and then some.                    

  • 1 1/2 C coconut sugar (or brown sugar, but coconut sugar is healthier AND tastes yummy)
  • 1 C butter at room temperature
  • 1 tsp vanilla
  • 1 egg
  • 2 C quick cooking oats
  • 1 1/2 C all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • chocolate chips
  • skor bits

1. Cream butter and sugar together in a large bowl until everything is evenly mixed.

2. Preheat oven to 350 Celsius.

3. Whisk in egg and vanilla.

4. Stir in all other ingredients. I apparently like to get a little dirty, so I squish it all with my hands. It mixes quicker this way, and your hands are soft afterwards, and smell HELLA tasty.

5. On an aluminum or parchment sheet lined cookie sheet, spread out even spoonfulls of cookie dough. I like to roll mine into balls first.

6. Bake for 10 minutes and let cool for 10 minutes. Enjoy!
