The Easiest, Most Foolproof, Fall-Off-The-Bone Ribs
I have never understood the hype surrounding ribs. I remember eating them once in a restaurant in Niagara, and I hated them. They were tough, chewy, and were everything I loathed about meat. I became a vegetarian for five years and never thought about them ever again. Fast forward to today, I got slightly bored of cooking the same cuts of meat over and over again, and wanted to experiment. I wanted to tackle this beast that we call ribs, I wanted to make him my b... best friend. I spent the day researching how to make ribs that are soft, free of that disgusting fat and sinew that turned me off ribs until now, and how to give them the ultimate flavour. I created my first experimental recipe, and it was a great success. Now, I am going to pass it onto you, my young grasshoppers.

- 1 rack of pork baby back ribs
- your favourite bbq sauce (if you are from Alberta, I highly recommend using Beary Berry Honey's Honey Chipotle BBQ sauce)
- your favourite dry rub (I made mine with a mix of chipotle mango spice, elder smoked salt, himalayan salt and a dash of black pepper)
- half a lemon
1. Preheat oven to 300 celsius.
2. Remove the silver skin membrane from the concave side of your ribs. Do this by gently inserting a sharp knife between the silver skin and meat in the middle of the ribs. Use a paper towel to gently pull it off of the ribs, it will help you grip the fatty tissue. If you are confused about how to do this (as I was) youtube a tutorial. Trim off any excess fat from the ribs as well. Cut the rack in half.
2. Squeeze the lemon all over your ribs, and rub it in an even layer.
3. Season your ribs generously with the dry rub, again, rub it in an even layer.
4. Cocave side up, place the ribs in a baking pan and cover tightly with aluminum foil.
5. Bake for 2.5 hours. Remove from heat and brush the bbq sauce evenly onto the ribs. Pop it on a medium heat grill for a 3 minutes per side, brushing more bbq sauce after each flip. If you don't have a grill, you can also broil each side of the ribs in your oven.
