The Ultimate Caprese Sandwich
Lately, I have been experimenting by putting everything in between buns... I mean bread. That came out wrong. Sandwiches are SO absurdly easy to get right, and you come out looking like a champion every time you make anything that doesn't involve deli meat and mustard. Not that there is anything wrong with deli meat and mustard. I was feeling the simple, yet fresh and delicious flavours of caprese, but I was too hungry to just eat a salad. How do you turn a salad into a meal fit for a queen (or king)? Add bread, butter and pan sear the crap out of it. Here it is, my fellow friendwiches, the Ultimate Caprese Sandwich.

- 2 pieces of grainy bread, each buttered on one side.
- 2-3 slices of tomato
- 1 tbsp mayo
- 2 leaves fresh basil or pinch of dried basil
- squeeze of lemon juice
- 3-4 slices of FRESH mozzarella (fior di latte, burrata or buffalo)
- sprouts or fresh basil or spinach
1. Chop up your fresh basil into a small mince, mix with mayo and lemon juice. Spread over the bottom piece of bread.
2. Place mozzarella slices on bread, followed by tomato slices and then the greens you have chosen
3. Heat a frying pan to medium heat. Place sandwich onto the pan and allow to cook for a few minutes, or until its nice and golden brown. Flip and do the same to the other side, pressing down with a spatula slightly.
4. If the cheese has not melted (I've run into this issue, as I like to slice my mozza quite thick), pop it in the microwave for 10-15 seconds. Enjoy!
