The Herbivore - Carnivore Truce

Men can be fickle, difficult creatures sometimes. Well, not really, actually. They just want meat. And sweets. And more meat. And sometimes cheese. What am I missing here? Vegetables. Damn those nutrient rich delights, they just can't win by men's standards. I woke up to a very hungry man bear today, and he wanted bacon (surprise, surprise). I had carrots and zucchini I wanted to get rid of, so I decided to do a very stealthy sneak attack. Vegetable fritters... BOOM. So I came together and formed this Yin and Yang of a breakfast; veggies to satisfy my tastebuds, and meat to satisfy his. We met in the middle with a cheesy omelet, and so, the truce was created.

Fritters

  • 1 zucchini
  • 2 medium carrots
  • 1/4 C grated parmesan cheese
  • 1/4 C flour
  • 1 egg
  • salt & pepper to taste
  • olive oil

1. Grate zucchini and carrots into a colander, squeeze out the excess juice and season with salt and pepper, mixing it all together. Let sit for 10 minutes.

2. Squeeze out the rest of the juice and mix in all other ingredients until combined. Heat up 2tbsp (rough measurement, I normally just dump out my oil onto the pan until it looks right) of oil on a frying pan at medium-high heat. Scoop large spoonfuls of your fritter mix onto the frying pan, flattening them to a thinner, more even consistency.

3. Let them fry until the bottoms are golden brown, a few minutes or so. Flip and repeat. Garnish with sour cream.

 

Omelet

  • 5-6 eggs (depending on how many each person wants; I usually have two, J has three)
  • your favourite cheese, shredded
  • milk
  • salt & pepper to taste

1. Take out two small bowls and divide & crack the eggs into each bowl, based on how much each person will be eating.

2. Add a SPLASH of milk. Yes, this sounds vague, but it really does take a splash. You need enough milk to change the colour JUST a bit, and to add that nice fluffiness to the omelet when it cooks. Too much milk will burn it. Less is more here.

3. Season with a dash of salt and pepper. Whisk everything together.

4. On a medium low preheated pan, add a few drops of olive oil and rotate the pan so that the oil spreads evenly. You want a small pan, and a lid that will cover the entire top. I've used pans with no lid to match, and used plates as a lid before. Add your first egg mixture.

5. Let the eggs cook for about 3 minutes, checking under the lid, occasionally, to make sure your eggs are cooking and rising properly. Once they are just about cooked, put a spatula under and very quickly flip the egg over and leave on for 30 seconds- 1 minute. Add as much grated cheese as you want, fold and slide the omelet onto your plate. You should have a fluffy, perfect omelet!

 

Extra Crispy Bacon

  • bacon strips, spread out on an aluminum covered baking sheet.

1. Preheat your oven to 400 Celsius. Pop the bacon into the oven and set a timer for 6 minutes. 

2. Take the bacon out, and flip them all over. Pop them back in for 5-8 minutes more. Keep checking back after 5 minutes to make sure they aren't burning. Bacon is ready when its a nice golden brown throughout, with slightly darker edges.

3. Lay bacon out in a single layer on paper towel, cover with more paper towel and apply pressure to soak up the grease. 

4. Plate with omelet and fritters, and you're done!
