The Tuna Caper 

Tuna sandwiches can normally leave much to the imagination, but some days, I just really want the salty, savoury flavour of tuna. I have found a way to take that savouriness to a whole new level, and all it takes is a few extra ingredients that you normally have around the pantry anyway. I never thought I could make a tuna sandwich taste so damn good. But I did, and now, so will you.

  • 1 can flaked tuna in water
  • 1 avocado
  • 1 heaping tbsp of mayo
  • 1 tbsp capers, drained
  • 2 pieces grainy bread, buttered
  • sprouts of choice
  • salt & pepper

1. Drain the tuna and put it into a small bowl. Mix with mayo, capers, and salt and pepper to taste.

2. In a separate bowl, vigorously mash your avocado. You want it to be nice and creamy.

2. Assembly time: bread, evenly spread tuna, evenly spread avocado, and a little layer of sprouts, followed by the last piece of bread.

3. Press your sandwich down to seal everything tightly. Fry each side until golden brown on your medium preheated frying pan. Be careful when flipping, as it can be a bit messy and the toppings can come out. I usually hold the side of the sandwich as I flip to avoid this issue. ENJOY!
